We sat down with Philip Moffat to talk about the challenges facing the hospitality industry, what sets Chakolas Pavilion apart, and the philosophy that drives every event they host.
Q As we all know, this industry has been hit hard by the ongoing gas crisis. What is your message to clients who have booked venues at Chakolas Pavilion?
A We are fully aware of what our industry is going through — and, more importantly, we are prepared. This goes back to our green initiative and our long-term commitment to sustainability.
I am extremely proud to say that we are Kerala’s first hotel and convention centre with an integrated 500 kW solar unit. This not only reduces our carbon footprint but positions us firmly at the forefront of a greener future for hospitality.
Our fully customised kitchen is equipped with induction bratt pans, combi ovens, and various state-of-the-art automations that allow us to prepare [meals per day] and comfortably cater to [number] guests at a time.
We are also fully equipped to cater not just within our own venues, but to events across [region/radius] as well.

Q I wasn’t aware that you cater outside of Chakolas Pavilion. Where all have you done these events?
A Yes, absolutely. We have handled several functions across Cochin, Thrissur, Kottayam, and Pala. Whether it is at your home, a convention centre, or any other venue — we can bring the Chakolas experience to you.
Q What types of cuisines and food is your team capable of delivering?
A Every menu we craft is carefully curated — we take the time to understand the tastes, preferences, combinations, and cuisines our guests truly desire.
We never take a one-size-fits-all approach. Every chef we have brought on board at Chakolas has been hand-selected. They are the best at what they do, and that standard of excellence is nonnegotiable for us.

Q What are the two most important ingredients, according to you?
A Without question — Consistency and Quality. These are the values we train our staff around, and they define everything we do at Chakolas.

Q Chakolas hosts conferences, exhibitions, corporate events, and destination weddings — some spanning two to three days. What kind of planning goes into a multi-day affair like that?

From a culinary standpoint, one principle we are very deliberate about is variety. It is important that no cuisine or flavour profile is repeated across the days — there must always be something new for our guests to look forward to.
